Your new delicious, and quick weeknight go-to dinner. You may already have most of the ingredients in your pantry now!
5 MINUTE PINK PASTA SAUCE
✔ 5 Minutes ✔ Weight Loss Friendly ✔ Gluten Free Option ✔ Oil Free ✔ Serves 3
INGREDEINTS
• 2 to 3 cups cooked pasta of choice, gluten free if desired
• 14.5 ounce can diced tomatoes
• 1/3 to 1/2 cup raw cashews
• 2 garlic cloves
• 2 tablespoons nutritional yeast
• 1/4 teaspoon dried basil
• 1/4 teaspoon dried oregano
• 1/4 teaspoon dried thyme
• 1/4 teaspoon garlic powder
• 1/4 teaspoon fennel seed
• 1/4 teaspoon crushed red pepper flakes
• Salt to taste, I used 1/2 a teaspoon
• 2 to 4 large handfuls of fish spinach leaves
For Serving:
Fresh basil, if desired
In a high speed blender add all ingredients except the spinach and blend on high for 2 minutes. Transfer to a sauce pan, add cooked pasta and combine over a medium heat for 1 minute. Add in fresh spinach and stir to combine for 1 minute. Cover the saucepan to allow the spinach to wilt for a few minutes or until ready to serve. Top with fresh basil, more nutritional yeast, salt and freshly cracked black pepper as desired.
