A really fast, easy, and delicious way to repurpose leftover Farro.
Ingredients
• 1 cup farro, cooked
• 4 basil leaves, cut into thin ribbons
• 1 garlic clove, minced
• 1 tbsp red onion, diced
• 1/4 cup thick balsamic vinegar
• 1/2 tsp dijon mustard
• Salt, freshly cracked pepper, and nutritional yeast to taste
For serving, desired amounts:
• Romaine lettuce
• Red bell pepper, sliced
• Cucumber, sliced
• Fresh basil, cut into thin ribbons
• Raw pine nuts
1. Cook farro according to package directions, if you don’t have it cooked already.
2. In a small mixing bowl add the basil, garlic, red onion, balsamic vinegar, mustard, salt, freshly cracked pepper, and nutritional yeast to taste.
3. Pour this mixture over the farro and stir until well combine. Serve with your desired amount of romaine lettuce, red bell pepper, and cucumber. Add more balsamic vinegar to the salad as desired, and garnish with more fresh basil and raw pine nuts.
Serves 1 to 2.
