Somethings like crispy shoestring French fries and cheese just go together. It doesn't mean that it has to derail your healthy diet though. This is a health-ified version of cheese fries with a nut free cheese sauce that includes hidden veggies to help you satisfy a craving yet still stay on track with health and weight loss on a Wfpb diet.
Vegan Cheesy Fries with Nut Free Cheese Sauce
✔ 50 minutes ✔ Weight Loss Friendly ✔ Gluten Free ✔ Nut Free ✔Serves 4
INGREDIENTS
• 2 pounds gold potatoes, peeled and cut into skinny pieces (shoestring fries)
• 1/2 teaspoon salt
• 1/2 teaspoon garlic powder
• 1 spray avocado oil (optional)
• 1 tablespoon water
For Serving:
• Sriracha (optional)
• 1 to 2 tablespoons fresh chives, finely chopped
1. Preheat the oven to 450 F. Line a baking sheet with parchment paper, set aside.
2. Peel the potatoes and cut into fries. Then in a large mixing bowl add the fries, salt, garlic powder, avocado oil spray (optional), and water. Use hands to combine. Evenly spread the seasoned fries onto the parchment paper lined baking sheet avoiding overlap. Bake for 40 to 45 minutes or until your desired crispiness is achieved.
3. Meanwhile, make the Nut Free Cheese Sauce.
4. Assemble the fries on the desired platter and top with desired amount of cheese sauce. Sprinkle chives on top and Sriracha as desired. Enjoy.
NOTE: The key to crispy oil free (or mostly oil free with 1 spray of oil) fries is the high temperature and leaving them in long enough. When they start to bubble near the end of the cook time you will know they are almost perfect and ready to take out.
