EASY WEEKNIGHT CAJUN PASTA

Enjoy this SPICY oil free, quick weeknight pasta. It comes together under 30 minutes and is so flavorful! If you prefer a less spicy pasta, simply use less Cajun seasoning than recommended.



EASY WEEKNIGHT CAJUN PASTA

INGREDIENTS

8 ounces Pasta of choice, or alternatively spiralize 2 to 4 medium zucchinis 

1/4 cup vegetable broth for sautéing

2 large bell peppers, red, yellow, or orange, sliced

5 garlic cloves, minced

4 to 5 teaspoons Cajun seasoning, plus more to taste if you like heat, you can make your own by following this perfect recipe

4 medium tomatoes, diced

1 pound Baby Bella mushrooms, halved

1 cup vegetable broth

3 tablespoons cashew sour cream, recipe below

Salt and freshly cracked black pepper, to taste

1 green onion, chopped, green part only



1 Prep and chop all of your veggies. Make the Cashew Sour Cream if needed (recipe below in Note). This meal comes together in the time it takes to cook the pasta, so next bring a pot of water to a boil and cook the pasta according to the package directs for al dente.


2 While the pasta cooks, heat a 1/4 cup of vegetable broth or water in a large frying pan over high heat. Add the bell peppers, garlic, and 1 teaspoon Cajun seasoning. Sauté for 3 minutes, stirring occasionally. Then add the tomatoes and 1 to 2 teaspoons more Cajun seasoning (depending on your heat preference) and cook for 5 minutes. Remove the vegetable mixture from the heat and transfer to a medium bowl, set aside.


3 Over a medium heat in the same frying pan as before, add the mushrooms, another 1 to 2 teaspoons of the Cajun seasoning (depending on your heat preference), and a bit more broth as needed. Stir to combine and cook for 3 minutes. Pour in the 1 cup of broth and bring to a boil. Cook for 5 minutes, stirring occasionally. Reduce the heat to medium low, add the 3 tablespoons of Cashew Sour Cream, stirring until combined. Then add the bell peppers and tomatoes back into the sauce. taste and add more Cajun seasoning, salt or pepper to taste Stir and cook on high for 5 to 7 more minutes allowing it to cook down. Stir in the pasta (or zucchini noodles). Top with the green onions to serve.



NOTE: If you prefer a less spicy pasta, simply use less Cajun seasoning than recommended above. To make the Cashew Sour Cream simply add 1 cup of soaked and drained cashews, 1/2 a cup of water, 3 to 4 tablespoons fresh lemon juice and salt to taste to a high speed blender for 3 to 4 minutes until creamy.
