The humble veggie sandwich can be so very satisfying with this Hemp Italian Spread! Jazz up a ho hum sandwich (or salad) with this "tastes like Olive Garden" spread. In a matter of minutes you'll have a great lunch on your hands bursting with flavor.
LOADED VEGGIE SANDWICH WITH ITALIAN SPREAD
✔ 10 Minutes ✔ Weight Loss Friendly ✔ Gluten Free Option ✔ Oil Free ✔ Serves 1
INGREDIENTS
Italian Spread serves 2
• 1/4 cup hemp seeds
• 2 garlic cloves 1/2 teaspoon yellow mustard
• 1 tablespoon fresh lemon juice
• 1 tablespoon white vinegar
• 1/2 teaspoon red crushed pepper
• 1/2 teaspoon dreid basil
• 1/2 teaspoon dried thyme
• 1 to 2 tablespoons of water to thin
• Salt and pepper to taste
Sandwich
• 2 slices of sprouted whole grain bread or gluten free bread
• 1 generous tablespoon oil free hummus, premade or from Eating Whole
• 3 to 4 large pieces of Romaine or Red Leaf lettuce
• 1/2 medium tomato, sliced
• 1/8 of a red onion, sliced
• 1/2 Persian cucumber, sliced
• 1 medium carrot, grated
1 Toast your bread if desired. In the meantime, in a high speed blender add all the spread ingredients and blend for 1 minute on high. Set aside.
2 Assemble the sandwich with the spread on one piece of bread, and the hummus on the other. Add the rest of the ingredients from above, close the sandwich and enjoy.
NOTE: You will have extra spread if just making one sandwich. Store leftovers in a small glass jar with a lid. To repurpose the spread as a dressing later on in the week, simply revitalize with a tablespoon of water to thin out further.
