POLISH INSPIRED POTATO LEEK SOUP


Dare I say this is the best Potato Leek Soup I have ever tried? I wanted to create a vegan version that mimicked my Polish mother-in-law’s famous soup, and this is a great healthy copycat recipe. The best part is that it is so very simple to make. Just 30 minutes, and you've got a creamy, cheesy, warming soup giving you a comforting hug in a bowl.



POLISH INSPIRED POTATO LEEK SOUP

✔ 30 Minutes  ✔ Weight Loss Friendly  ✔ Gluten Free ✔ Oil Free  ✔ Serves 4


INGREDIENTS

1 large onion, diced

2 trimmed leeks, sliced

2 medium gold potatoes, peeled, halved and sliced

6 cups vegetable broth

2 to 3 tablespoons Jalapeño Cheese Sauce, recipe below

2 tablespoons fresh parsley, chopped

• Salt and freshly ground black pepper to taste


Jalapeño Cheese Sauce makes 1 and 1/2 cups

1 and 1/2 cups of raw cashews, soaked and drained

1/4 to 1 whole medium jalapeño, optional

2 tablespoons fresh lemon juice

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 cup nutritional yeast

Salt to taste

3/4 cups to 1 cup of hot water



1 Prep and chop your veggies. In a large soup pot over medium high heat add 1 cup of broth and bring to a boil. Then add in the onion and leeks and simmer for 5 minutes.


2 Next add in the potatoes and the broth and simmer with the lid on slightly ajar for 10 to15 minutes or until the potatoes are tender but not mushy.


3 Meanwhile in a high speed blender make the Jalapeño Cheese Sauce by adding all the sauce ingredients and blending on high until smooth. Set aside. See note.


4 Turn off the heat from the soup and stir in the 2 to 3 tablespoons of Jalapeño Cheese Sauce. It will look very stringy initially but it will combine to a creamy texture. Then add in the chopped fresh parsley, salt and pepper to taste and enjoy.



NOTE: Leeks are a great way to add variety from the Alliaceae family. Rich in manganese, Vitamin K, Beta Carotene & Iron, they are a fantastic soup base. You will only be using 2 to 3 tablespoons of the cheese sauce, so you can use the extra on nacho, as a veggie dip, or in another dish throughout your week.
