SAVORY & SWEET: 2 Vegan Bread Spreads | Cherry Chia Seed Jam | Roasted Red Pepper Tapenade

I've been doing Easy Vegan LIVE cooking demos on my Youtube channel during this season of quarantine, and I wanted to share these super simple recipes you can put together with things you may already have in your pantry and fridge. The homemade bread recipe is in my cookbook "Be Vegan - Skip the Diet, Just Eat Healthy" I'll also link the video version below if you'd like to learn how to make the bread as well. CHERRY CHIA SEED JAM:


INGREDIENTS:

1.5 cups frozen sweet cherries

1 tsp vanilla extract

1 tbs lemon juice

4 tbs chia seeds

3 to 4 tbs maple syrup


1. In a medium sauce pan heat the cherries and lemon juice over a medium heat. Bring to a simmer and begin mashing with a fork or potato masher for a few minutes.


2. Turn off heat, then add in vanilla, chia seeds, and maple syrup. Combine, and then transfer to a glass jar with lid. Place in the fridge for 2 to 3 hours to solidify.


3. Option to make a smoother version by placing the contents into a food processor and pulse till a smoother jam consistency comes. I like this smoother option best.


Enjoy atop the freshly baked bread!




ROASTED RED PEPPER TAPENADE


INGREDIENTS:

3 garlic cloves

1/2 cup raw almonds (soaked and drained)

12 oz. roasted red bell pepper (drained very well

Spices to taste:

I used himalayan salt, garlic salt, smoked paprika, and nutritional yeast


1. Place all ingredients into a food processor and process until you reach your desired consistency (more chunky or more smooth). Store in a glass jar with lid.


Enjoy atop the freshly baked bread!
