Here is the second recipe of my “30 Minute Meals for 2” recipe series. Smoothie Bowls are all the rage and the trend doesn’t seem to be going away anytime soon. This recipe is a a great way to get in your servings of fruit for breakfast in under a few minutes of prep time. Feel free to experiment with toppings of your choice, and play with the base smoothie ingredients as you get comfortable making this recipe.
INGREDIENTS
2 frozen bananas
1 cup frozen mango chunks
1/4 tsp vanilla extract
1/2 cup freeze dried strawberries
Topping Options
Granola
blueberries (fresh or frozen)
coconut flakes
chia seeds
pumpkin seeds
more freeze dried strawberries
1. Using a vitamix or high speed blender, add the frozen mango, frozen banana, and vanilla extract. The key to a thick smoothie bowl is not to add water. On a low or a 1 to 3 speed begin to blend frozen contents while using a tamper. You can raise the speed slowly but incrementally begins careful not to burn the motor of your blender. Blend until smooth.
2. Next, add in the freeze dried strawberries until the contents becomes a beautiful strawberry color. I used freeze dried strawberries because the do not add anymore liquid to the equation, but if you prefer you can add fresh or frozen strawberries as well.
3. Pour your thick smoothie into one or two bowls and garnish with desired toppings.
