SWEET CHILI MANGO CHICKPEA BOWL

Easy, fast and so very flavorful. Crispy seasoned chickpeas, a dye free and delectable sweet chili sauce, plus a mix of fresh produce that is divine. All under 30 minutes. You will love this bowl!



SWEET CHILI MANGO CHICKPEA BOWL

✔️ 30 Minutes ✔️ Nut free ✔️ Weight Loss Friendly ✔️ Serves 2


Bowls:

2 cups cooked rice of choice

2 to 4 cups greens of choice, I used a mix of romaine, mustard greens, and arugula


Sweet Chili Sauce:

1/3 cup rice vinegar

1/3 cup water

1/3 cup + 2 tablespoons monk fruit sweetener, or other granualted sweetener of choice

1 teaspoon crushed red chili flakes

2 large garlic cloves, minced

1/2 teaspoon fresh ginger, minced

1 teaspoon soy sauce OR coconut aminos

Slurry made of 2 teaspoons cornstarch or tapioca starch + 1 tablespoon water


Chickpeas:

2 cups cooked chickpeas, or one 15 ounce can, drained and rinsed

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon salt, or more to taste


Salad:

1 Champagne or Ataulfo mango, diced

1/2 medium avocado, diced

1/2 jalapeno, sliced, optional

1/4 cup red onion, diced

1/2 cucumber, sliced

1/4 cup cilantro, minced

Salt to taste

Juice of half a lime, or more if desired



1 Make the Sweet Chili Sauce by placing all sauce ingredients except for the slurry in a small sauce pan and bring to a boil stirring occasionally. Once the monk fruit sweetener has dissolved add in the slurry and stir constantly until thickened, 1 to 2 minutes. Set aside to cool and thicken a bit further. Extra can be stored in a glass jar with lid for 1 week.


2 Preheat oven to 425 F. Line a baking sheet with parchment paper and set aside. Lay the drained and rinsed chickpeas on a tea towel and pat dry. Combine the chickpeas and spices in a small bowl to coat. Spread onto the parchment paper lined baking sheet evenly and bake for 25 to 30 minutes until crisp.


3 Assemble your bowls by laying down a bed of greens, then add the rice, top with the chickpeas, and then the salad. Drizzle on Sweet Chili sauce and enjoy.
