SWEET POTATO FRY & CHICKPEA SALAD

Feels like fun with fries, but also very strategic getting in loads of nutrients with a robust salad and seasoning for a delicious lunch or dinner.



SWEET POTATO FRY & CHICKPEA SALAD

✔ 30 Minutes  ✔ Weight Loss Friendly  ✔ Gluten Free ✔ Oil Free  ✔ Serves 2


INGREDIENTS

Sweet Potato Fries

1 to 1 and 1/2 pounds sweet potatoes, peeled and cut into fries

1 cup cooked or canned chickpeas, if canned, drain and rinse

2 tablespoons water

1/2 teaspoon ground cumin

1/2 teaspoon dried thyme

1/2 teaspoon marjoram

Salt and pepper to taste


Lemon Tahini Dressing serves 2

2 tablespoons tahini

2 garlic cloves, pressed

1/4 cup lemon juice

2 teaspoons maple syrup

1 to 3 tablespoons of water to thin

1/2 tablespoon fresh chives


Salad

5 cups red leaf lettuce, torn or chopped

1 to 2 Persian cucumbers, sliced

1/8 to 1/4 cup red onion, sliced



For Serving

A few sprigs of fresh dill

A small sprinkle of sesame seeds



1 Preheat the oven to 425 F. Line a baking sheet with parchment paper. Cut the sweet potatoes into fries. Place in a large mixing bowl, add the chickpeas, seasoning and toss. Spread the fries and chickpeas evenly on the parchment paper lined baking sheet and bake for 30 minutes or until crisp.


2 In the meantime make the dressing by adding in all the dressing ingredients except the chives into cup and whisk until smooth. Stir in the chives. Salt and pepper to taste. Set aside.


3 Assemble your salad bowls and top with your desired amount of sweet potato fries and chickpeas. Drizzle on some dressing, and serve with fresh dill and a sprinkle of sesame seeds.
