THE CREAMIEST MAPLE MUSTARD DRESSING

The recipe I've been wanting to cover my salads in, and dip my fries into for years!

THE CREAMIEST MAPLE MUSTARD DRESSING serves 4


INGREDIENTS

• 1/4 cup Dijon mustard

• 1/4 cup maple syrup

• 2 tbsp lemon juice

• 2 tbsp Cashew Sour Cream*

• Salt and freshly cracked black pepper to taste


1. In a small mixing bowl, whisk all ingredients together until creamy. Great for dipping, or as a salad dressing. Store in a glass container with lid 3 to 5 days in the fridge.


NOTE: I used the Cashew Sour Cream* recipe from my cookbook Eating Whole. To make it, simply add the following to a high speed blender and blend until smooth: 1 cup raw cashews (soaked and drained), 1/2 cup water, 3 to 4 tbsp lemon juice, salt to taste.
