This recipe is so simple that it is almost a non-recipe. I have been eating it on repeat lately. It's quick, healthy, and comforting. Tomato, onion, and garlic are the perfect trifecta turning simple ingredients into a flavorful meal. Garnish with fresh basil, and take it to another level.
TOMATO & SWEET ONION PASTA
✔ Prep Time 5 minutes ✔ Cook Time 20 minutes ✔ Weight Loss Friendly ✔ Serves 3
INGREDIENTS
• 8 ounces short pasta noodles of choice
• 1/4 cup vegetable broth
• 5 garlic cloves, minced
• 1 medium sweet onion, diced
• 8 ounces cherry or grape tomatoes, halved
• Salt and freshly cracked black pepper
For Serving:
• Steamed vegetables of choice, I used asparagus
• Garnish with fresh basil or fresh spinach, chopped
1. In a large pot, bring water to boil to cook pasta and follow package directions. In the meantime make the tomato and sweet onion sauce.
2. Prep your veggies. In a large frying pan over medium heat, add the vegetable broth, then the garlic and onion and sauté for 5 minutes. Add the tomatoes, cook another 10 minutes over medium to low heat, stirring occasionally and adding more broth as needed. Salt and pepper to taste. Set aside.
3. Once the pasta is done, drain and then add to the frying pan with the tomatoes and sweet onion sauce. Mix to combine. Garnish with fresh basil or spinach and serve with steamed veggies of choice (optional).
